Vineyards

Valdubón Verdejo is made entirely from the Verdejo variety. The vineyards where the grapes are grown are distributed throughout DO Rueda, but mainly around the villages of La Seca, Olmedo, Hornillos and Valdestillas. Valdubón Verdejo is made partly from grapes fermented traditionally in stainless steel tanks, and partly barrel fermented. For tank fermentation we used trellis trained vines with an average age of 12 years, and only pressed to a maximum of 72% of the available juice. For the part of the wine which was barrel fermented we used old vines, in excess of 25 years old, bush trained and not irrigated, and we pressed the fruit to a maximum yield of 60%.

Tasting Note

Star bright light yellow, with flashes of green. The nose is a true reflection of the wine’s potential. Intense, with fine vegetal aromas, typical of the Verdejo, mixed with tropical fruits, and a touch of fennel, aniseed and freshly mowed hay which combine perfectly with the spicy notes of vanilla, coconut and tobacco leaf from the short barrel ageing. The palate is lively, refreshing and bright from the balanced acidity. Behind this crisp start the palate becomes rich and supple a result of the period of lees maturation. It finishes long and bright, with a lightly bittersweet aftertaste typical of the elegant Verdejo varietal. Serve well chilled.
