Chablis 1er Cru Vaucoupin 75cl J. Moreau & Fils
HISTORY : The most recent list of Premiers Crus was issued in 1986. 79 hamlets figure on the list and cover a surface area of approximately 600 ha. The winegrowers of Chablis grouped together these hamlets under the names of 17 “climats” or single vineyards. These vineyards are located on either side of the Serein river in the communes of Chablis, Fontenay, Maligny, Chichée, La Chapelle-Vaupelpeigne, Courgis, Fleys, and Beines.
LOCATION : The 27 hectares of Vaucoupin’s vines are located on the right bank of the Serein river in the commune of Chichée.
TERROIR : Gentle slopes overlying Kimmeridgian marls
VARIETAL : 100% Chardonnay, also known as “Beaunois” in Chablis. Yield: 50 hl/ha.
VINIFICATION
- both must and grapes were brought in
- long pneumatic pressing
- static settling
- alcoholic fermentation lasted 10 days in stainless steel tanks under controlled temperatures (18 to 20°C)
- selected yeasts were used to induce malolactic fermentation in mid-October
- malolactic fermentation was complete by mid-November
- aged on the lees for a minimum of 6 months with frequent twice monthly pumping-over
ORGANOLEPTIC ANALYSIS
Pale gold in colour.
Complex nose, still young, with notes of flint and citrus zest along with herbal scents reminiscent of thyme, fresh mint and bergamot.
Full and powerful on the palate with flavours of dried fruit, citrus zest, and spice, ending on a lemony note. Very long on the finish.
Ideal with salmon in butter sauce, as well as with capon or roast guinea fowl.
