Sake Nihonshu Bijito Junmai 72cl 14.5%
Bijito is a nihonshu saké produced exclusively in Japan. The result of the fermentation of rice, water and koji (a natural enzyme that enables the transformation of starch into sugar), this Junmai saké is produced from Koshi Hikari rice polished to 70 percent .
Produced by the Kizakura brewery , one of the most important in Japan , this dry saké exhibits notes of green apple .
Rice variety : Koshi Hikari
Tasting Notes :
- Nose : fresh and fruity. Characterised by green apple and vinous notes of white grapes, it is also floral (white flowers), mineral (chalk) and milky (cream). Subtle, it evolves with notes of almond milk and rice pudding, before finishing with vine flowers.
- Palate : fairly rich and mineral, but also subtle and elegant. Notes of green apples and pears are followed by green banana and a milky aspect (feta cheese). A very subtle acidity ensures length.
