L'utilisation du gingembre frais comme condiment est resté longtemps inconnue en Europe.

Ce n'est qu'après les découvertes de Marco Polo, que cette racine originaire d'Asie a refait son apparition en Europe. Utilisé sous forme séchée ou confite, essentiellement en pâtisserie, pour le pain d'épices, les gâteaux ou la glace.

Fraîche, cette racine a une saveur foncièrement différente et sera appréciée à sa juste valeur dans les plats préparés au wok ou à feu très vif: le goût frais, piquant et citronné de la cuisine asiatique.
