The SAUVION house is located in the heart of the Nantes vineyard in Château du Cléray-Sauvion in Eolie; Eolie, land of the wind, relating thus to the ocean breeze, that comes to gently sweep through the vines. This château belonging to the SAUVION family since 1935 is, with its old vaulted cellars, one of the most ancient properties in the Sèvre et Maine vineyard. Grape variety : 100 % Melon de Bourgogne.
Soil : sand and schist.
Yield : 45 hectolitres per hectare.
Vinification/maceration : Refrigeration of the musts. Cool fermentation during 16 days in stainless steel tanks and kept on the lees during 6 months.
Residual sugar : about 2.5 g/l.
Alcohol : about 12 %.
Acidity : about 3.5 g/l.
Service temperature : 13 C°.
Colour : Diamond with silver tints.
Nose : Yellow peach, pear, grapefruit, minth, citrus
Mouth : Dry, fresh, with a great finesse, ending with notes of citrus.
Best Match : Enjoy it by the glass as an aperitive, or obviously with a good seafood platter.
