Château du Cléray Sauvion, one of the oldest estates of the Sèvre et Maine, is located near Vallet, in the centre of the Muscadet region. Sometimes, on the hills of the Château du Cléray-Sauvion, a light ocean breeze blows, and sweeps gently across the vines like the God "Eole" in the mists of time. How romantic, and how suitable then, that the Château du Cléray-Sauvion vineyards should be baptized the "Eolie Region".
Appellation : Appellation Muscadet Sèvre et Maine contrôlée sur lie.
Grape Variety : 100 % Melon de Bourgogne.
Soil : Sandy-clay. Vinification/maceration : Pre-fermentation, skin contact at low temperature, 19day cool fermentation in temperature-controlled stainless steel tanks. Maturation on lees for 6 months
Residual sugar : About 2 g/l.
Alcohol : About 12 %
Acidity : About 3.5 g/l.
Service temperature : 12 C°.
Colour : Translucent with hints of silver.
Nose : A bouquet of white flowers combined with a fresh lemony citrus fruit.
Mouth : Exceptionally fresh and rounded and generally very palet-pleasing.
Best Match : Obviously a perfect partner with seafood and shell-fish. A mousseline of St-Jacques is also a good marriage. Also a delicious aperitive.
