There are a lot of different kinds of cherries. You have sweet cherries that vary from pale yellow-red to dark red and you have sour cherries. Sour cherries have a nice dark red colour. The sweet cherries are only available fresh during the cherry season that runs from June till July. The sour cherry season only starts at the end of July, the beginning of August. You eat the sweet cherries when they are at their best, as soon as they are ripe. Sour cherries, on the other hand, are often used in many preparations because they are too acidic to eat.
Prepared cherries are excellent to accompany meat dishes such as duck. They refresh roasts and preparations such as meat loaf or meatballs. According to an old rule, fruit from the same family ensures successful combinations. It goes without saying that almonds are ideal partners, for example in cherry pie with frangipane filling. Cherries also show a special affinity with two very different products: chocolate and goat cheese. A proof of the first combination can be found in the Schwarzwalder Kirschtorte, a powerful chocolate pastry with cherries and kirsch. The second combination ensures a simple but deliciously fresh summer dessert: fresh goat's cheese with prepared cherries. All this does not alter the fact that cherries are also delicious in savory dishes, such as in a salsa for eel, or that sour cherries can be used for desserts, such as rice pudding with prepared cherries.
