Bresc Ginger puree

It took a while for the use of fresh ginger as a flavour enhancer to catch on in Europe. It was not until Marco Polo's voyages of discovery that this root, which originated in Asia, was introduced in Europe. It comes in dried or preserved form, and is mainly used in bakery products such as cakes, pastries or ice-cream. This root tastes very different when fresh, and is a popular ingredient in wok/stir-fry dishes: the refreshing, punchy citric flavour from Asian cuisine.
