Merlot-Cabernet J.Moreau & Fils 75cl Vin de Pays d'Oc screwcap
HISTORY : Both of these varietals originate from the Bordeaux region, Cabernet Sauvignon is the leading French noble varietal, known for its high tannins and the structure it lends to the wines made with it. As for Merlot, though it was long considered a secondary varietal, today it is very much sought after for the fruit and softness it lends to blended wines. Both are being cultivated more and more in southern France (in the Aude, Hérault, Gard, and Pyrénées Orientales departments). LOCATION The Languedoc region, on the plateaus surrounding the town of Carcassonne.
TERROIR : Clay- based soils
VARIETALS : 70% Merlot, 30% Cabernet Sauvignon
VINIFICATION :
- the grapes were harvested at optimum maturity
- crushing and destemming
- the press juices and the free- run juices were separated - the pomace was left in the must for one week of fermentation
- pumping- over of the must - temperatures were maintained at 28°C - some of the press wine was added during final blending
ORGANOLEPTIC ANALYSIS :
Purple in colour tinged with violet.
Cherry and fine spices (cinnamon and nutmeg) on the nose.
This round wine is modern in style and boasts velvety tannins and flavours of blueberry and blackberry. Lovely length.
This wine may be enjoyed on its own, slightly chilled, as an aperitif. Also a fine match for red or grilled meats.
